Ceramic Pans
Why buy your ceramic frying pan at Claudia&Julia
At Claudia&Julia we specialise in frying pans without traditional non-stick coatings, and we have been working with PTFE-free ceramic frying pans for many years. We stock the best brands, such as GreenPan, Fissler, Kuhn Rikon, Bra, Cristel, De Buyer, WMF and Zwilling, and we know how each one performs in a home kitchen. More than 400 verified reviews from customers who already cook with them, with an average rating of 4.8 out of 5, back this up.
What is a ceramic frying pan?
It is a non-stick frying pan with a ceramic (sol-gel) coating instead of the PTFE used in traditional non-stick pans. Underneath there is an aluminium body, which heats up quickly and spreads the heat very well, or stainless steel in the sturdier models. With it you cook over medium heat, with very little oil and without anything sticking.
- Nothing sticks. Eggs, omelettes, fish or vegetables release on their own with a few drops of oil.
- Light and easy to handle. The aluminium ones can be moved with one hand, and it is what our customers praise most after the non-stick performance.
- Cleans in no time. With warm water, a little washing-up liquid and a soft sponge.
- PTFE-free. And many manufacturers, such as GreenPan, Fissler, WMF or De Buyer, state that their coating is PFAS-free. We give the details on each model's product page.
- For induction, gas and ceramic hobs. With a diffuser base that spreads the heat evenly.
- Performs best over medium heat. It is the temperature at which it cooks best and at which the coating stays as good as new.
How to choose your ceramic frying pan
The first thing is the body of the pan, because it determines the weight, whether it can go in the oven and the style:
| Aluminium body | Stainless steel exterior | |
|---|---|---|
| What it is like | Light, heats up quickly and spreads the heat very well. | Sturdy and elegant, it stands up better to knocks and heavy use. |
| Weight | Light: you can handle it with one hand. | Heavier, which makes it more stable on the hob. |
| Oven | Depends on the model: the Easy Ceramic by Kuhn Rikon goes up to 220 °C; Fissler's Ceratal pans are not oven-safe. | Yes, most of them: the Geneva by GreenPan and the Hybrid Cell by Bra up to 220 °C and the Durado by WMF up to 250 °C. |
| Models | Essence by GreenPan, Ceratal by Fissler, Essential by Fissler, Easy Ceramic by Kuhn Rikon, Life by Bra and Ceranoa by De Buyer. | Geneva by GreenPan, Durado by WMF, Hybrid Cell by Bra and Pure by Zwilling. |
- The size. It is measured across the top rim; the base is smaller (on the Life frying pan by Bra, about 17 cm on the 24 cm pan and about 20.5 cm on the 28 cm pan). The 20 cm pan is for one or two people, the 24 cm is the most versatile and the 28 cm is for families.
- The shape. The classic frying pan is the most versatile. The deep or sauté pan, such as the Ceratal Comfort, holds more for stir-fries and dishes with sauce. And there are also woks, crêpe pans, grill pans and paella pans.
- The handle. A Bakelite handle does not get hot on the hob. A stainless steel handle lets you put the pan in the oven.
If it is your first ceramic frying pan, the Life by Bra is light, comes in six sizes and is our best seller. If you want the brand that has specialised in ceramics since 2007, the Essence by GreenPan, light and in five sizes. And if you are looking for German manufacturing and a base that holds heat very well, the Ceratal Classic EVO by Fissler.
Ceramic, traditional non-stick, iron or stainless steel?
Each material has its moment in the kitchen. Ceramic shines with anything delicate. Its non-stick performance is high, though a little lower than a traditional non-stick pan, so it needs a few drops of oil:
| Ceramic | Traditional non-stick | Iron or stainless steel | |
|---|---|---|---|
| Surface | Ceramic coating, PTFE-free. | PTFE coating. | No coating. |
| Non-stick performance | ●●●●○ Very high, slightly lower than traditional non-stick. |
●●●●● The highest. |
●●○○○ Low: food releases at the right temperature, and iron improves as it builds up a patina. |
| Heat | Medium or medium-low. | Medium. | Medium to high. |
| Oil | Very little. | Very little. | A bit more, and you need to get the hang of the heat. |
| Ideal for | Eggs, omelettes, fish and vegetables. | Eggs, omelettes and fish. | Searing meat, high-heat griddling and browning. |
| Care | By hand, with wooden, silicone or nylon utensils. | By hand, with wooden, silicone or nylon utensils. | Iron: dry it and rub in a few drops of oil; stainless steel: by hand or in the dishwasher. |
Many customers have one of each: the ceramic pan for delicate food and an iron or stainless steel pan for searing. As one customer puts it: “White fish doesn't stick at all, even though we use very little oil. They are the perfect pans to complement our cast iron ones”. Take a look at our non-stick frying pans, iron frying pans and stainless steel frying pans too.

| Who it is for | Anyone looking for German manufacturing for everyday use. | Anyone getting started with ceramic. | Anyone who wants a light frying pan in several sizes. | Anyone who wants the look of stainless steel without anything sticking. | Anyone who wants a sturdy, oven-safe frying pan. | Anyone who wants the ceramic specialist brand, with a stainless steel body. |
| In a customer's words | “For some dishes it doesn't need a single drop of oil, and for others four drops are enough”. Alicia S., Ceratal Classic | “The fish doesn't stick, you hardly need any oil and it comes out perfect, soft and tender”. Sara | “I bought them for omelettes and we love them, they glide beautifully!”. Sandra L., set of 3 | “Perfect for searing delicate things, fish, eggs, vegetables, and nothing sticks”. Luz | “It's sturdy and you can tell the quality. The handle doesn't get hot at all”. Mariam T. | “I love the riveted handle, and the whole pan looks super sturdy and high quality”. Irene, Geneva set |
How to read the comparison. Nothing sticks in any of them, and they are all suitable for induction. What changes is the body, the weight and whether they can go in the oven: the aluminium ones are lighter and those with a stainless steel exterior are sturdier. The reviews are those left by our customers on each product.
How to cook with and care for your ceramic frying pan
When cooking. Heat it gradually over medium or medium-low heat with a few drops of oil, and do not leave it empty over high heat. On a hob with settings from 1 to 9, many customers use 6 or 7, and on induction, without booster. Use a burner the size of the base and wooden, silicone or nylon utensils. Take food out of the fridge a little beforehand: that way it won't rob the pan of heat.
When cleaning. Let it cool down, wash it by hand with warm water, a little washing-up liquid and a soft sponge, and dry it. Although some manufacturers allow the dishwasher, the coating lasts better when washed by hand. When storing it, place a pan protector or a cloth between pans so they don't get scratched. We tell you everything in our article on the advantages and disadvantages of ceramic frying pans and how to use them.
What our customers say
Our ceramic frying pans have more than 400 verified reviews between them, with an average of 4.8 out of 5. What our customers highlight most is that nothing sticks, even with very little oil, how easy they are to clean and how light they are, and many use them mainly for omelettes, eggs and fish. Those who get the best results agree on the trick: medium heat and heating the pan gently. As one customer puts it: “Light, uses little oil, holds the heat very well even when you turn the temperature down”.
Questions about ceramic frying pans
What is a ceramic frying pan and how is it different from a traditional non-stick pan?
It's a non-stick frying pan with a ceramic (sol-gel) coating instead of the PTFE used in traditional non-stick pans. Both let you cook with very little oil and without anything sticking. A ceramic pan is used over medium or medium-low heat and washed by hand, and it's the one many customers choose for eggs, omelettes, fish and vegetables.
What are they made of? Do they contain aluminium, PTFE or PFAS?
Most have an aluminium body, which heats up quickly and spreads the heat very evenly; others, such as the WMF Durado or the BRA Hybrid Cell, are made of stainless steel. The aluminium is covered by the ceramic coating, so food only touches the ceramic. The ceramic coating contains no PTFE, and manufacturers such as GreenPan, Fissler, WMF, De Buyer, or BRA for the Hybrid Cell, also state that it is PFAS-free. We give the details on each model's product page and explain it in our article on the pros and cons of ceramic frying pans.
What temperature should I cook at? How do I heat it?
Over medium or medium-low heat. Heat it up gradually with a few drops of oil and, once it's hot, add the food. On a hob with settings from 1 to 9, many customers use 6 or 7; on induction, without the boost function. Don't leave it empty over high heat: the coating lasts much longer and the food turns out just as well, because the pan spreads the heat very evenly.
Do I need to use oil?
Yes, a little: a few drops or a teaspoon is enough for most dishes, and that's what our customers value most. Oil protects the coating and helps food brown. Avoid spray oils, which leave a film that burns and ends up making food stick.
Why does my food stick?
It's almost always down to the temperature: if the pan is too cold, the food releases water and sticks; if it gets too hot, the coating loses its non-stick properties. Heat it calmly over medium heat with a few drops of oil, take food out of the fridge a while beforehand and pat it dry, especially fish. If over time you notice that food sticks more, it's often a film of burnt oil: wash the pan with warm water, washing-up liquid and a soft sponge, scrubbing a little more thoroughly.
How long does the non-stick coating last and what damages it?
It mainly depends on how it's used. What shortens its life the most is high heat, heating it empty, sudden temperature changes (for example, putting it under the tap while hot), the dishwasher, metal utensils and storing it stacked without protection. Once the coating is scratched or burnt, it can't be restored. With medium heat, washing by hand and wooden, silicone or nylon utensils, it lasts much longer.
Are they suitable for induction?
Yes, the vast majority are suitable for induction, gas, ceramic and electric hobs: we state this on each model's product page. Use a burner the size of the base of the pan and heat it up gradually, without the boost function: sudden heating can warp the base.
Which size should I choose? Is it measured at the rim or at the base?
The size is the top diameter, not including the handle. The base is smaller: in the BRA Life frying pan, about 17 cm for the 24 cm and about 20.5 cm for the 28 cm; in the WMF Durado, 18 cm for the 24 cm and 22 cm for the 28 cm. The 20 cm is for one or two people, the 24 cm is the most versatile and the 28 cm is for families. Each model's product page shows the base diameter so you can choose the right burner.
Can they go in the oven?
It depends on the model. The GreenPan Geneva, the Kuhn Rikon Easy Ceramic and the BRA Hybrid Cell can go in the oven up to 220 °C, and the WMF Durado up to 250 °C. The GreenPan Essence up to 160 °C, and the De Buyer Ceranoa for 10 minutes at 200 °C. Fissler Ceratal pans can't go in the oven. We state this on each model's product page.
Can they go in the dishwasher? Which utensils should I use?
We recommend always washing them by hand, once they've cooled down, with warm water, a little washing-up liquid and a soft sponge. Some manufacturers, such as GreenPan, or WMF for the Durado, allow the dishwasher, but detergents and long cycles wear the coating out faster. For cooking, use wooden, silicone or nylon utensils.
Do they brown well? Are they good for searing and frying?
Yes, over medium heat and with the pan well preheated, they brown eggs, omelettes, fish, vegetables and meat beautifully. To sear a thick cut of meat over high heat or get a socarrat, an iron or stainless steel frying pan is better. That's why many customers have a ceramic pan for delicate food and an iron or stainless steel one for searing.
What's the difference between Fissler's Ceratal Classic and Comfort?
Both have the same Ceratal ceramic coating and the same type of base. The Classic has a more concave, traditional shape, ideal for omelettes and stir-fries. The Comfort has higher, straighter sides and more capacity, for generous stir-fries and dishes with sauce. The EVO versions have an improved diffuser base, which is wider and thicker and holds heat better.
